Thai Inspired Cilantro-Kale-Pineapple-Lime Juice

One of our favorite juices is a version of a Thai Green juice made of cilantro, kale, pineapple and lime. It may sound like an odd combination but wait until you have tried it. The combination is magical!

Would you know that cilantro (also known as coriander) is known to have many disease preventing and health-promoting properties. The leaves and seeds contain many essential volatile oils such as borneol, linalool, cineole, cymene, terpineol, dipentene, phellandrene, pinene and terpinolene. The leaves and stem tips are also rich in numerous anti-oxidant polyphenolic flavonoids such as quercetin, kaempferol, rhamnetin and epigenin. Cilantro is rich in Vitamin A and Vitamin K. Vitamin K has a potential role in bone mass building by promoting osteotrophic activity in the bones. The best part about cilantro however (I think) is that it has been found to remove heavy metals from the body. Yes, heavy metals such as mercury, cadmium, aluminium, lead and arsenic!

According to the 13th International Symposium of The Institute for Functional Medicine, Cilantro is one of the foods and phytochemicals that can boost the detoxification process by enhancing the detoxification pathways and may help remove the heavy metals like Mercury.

Studies conducted at Heart Disease Research Foundation of New York in 1995 reported that Cilantro accelerated the excretion of heavy metals like lead, mercury and aluminum from human body through urine.

One of the articles in Journal of Hazardous Materials written in February 2005 experimented the effects of cilantro and methyl mercury deposits in ground water and found out that Cilantro was effective in removing the deposits of the metal. The research lead at the Department of Atomic Energy suggested that it is the carboxylic acid groups in the Cilantro herb which bind the mercury.

Cilantro has several other health benefits like maintaining blood cholesterol levels by aiding fat metabolism, stimulating appetite and improving the digestive process, this may make you consider using cilantro as a part of our regular diet.

In order to do a “heavy metal” cleanse, it is recommended to drink 1/4 cup of cilantro daily for 10 days in a row. In order to make this more palatable, let me share this yummy, yummy recipe with you.

1/4 quarter of a pineapple (or less if you need to watch your sugar)
1 bunch of kale
1 bunch of cilantro
2 limes, peeled

Directions: Juice the pineapple, kale, cilantro and peeled limes in the juicer of your choice. Add some ice cubes. Enjoy!

Note: If you are watching your blood sugar, use less pineapple and use liquid stevia to help sweeten to your taste.
